Green Beans and Mushrooms
After hosting a "healthy living" category on my linky party, I realized that I don't post that many healthy recipes!
So, I'm going to try to put a few more of my favorites on here, and feature others that link them up!
Here's the recipe:
1 lb fresh green beans, trimmed
2 cups sliced fresh mushrooms
1/8 cup butter or margarine
1 tablespoon garlic
1/4 cup sliced almonds
salt and pepper
Top with Parmesan cheese.
* I have also seen it made with sliced celery.
*Saute the garlic and mushrooms first in the butter, then add the beans until cooked just enough. Then top with salt, pepper, almonds and Parmesan.
* To make this recipe even more healthy, skip the butter and use 2 tablespoons of olive oil.
Changes I made:
* For my meal, I didn't have any almonds (although they make it so delicious). I also threw some garlic salt on it because I was out of garlic ....still delicious!

ReplyDeleteLooks yummy! We're on a very strict heart diet here so I'd go a step further and just use the butter flavor spray to saute and skip all the fat. Thanks for posting -- my mouth is watering!
